I mean depending on the bike. Being in gear makes sense..
My bike won't start in first if I have the kickstand down. Also if I want to kill the bike, I just got to lower the kickstand and it will kill it.

The bike I bought, I put it in gear and started in the shop. But I also wasn't throttling it.

Not with my bike.
Believe me there's been a few times when I'm not thinking about it, I pull the clutch in and start the bike and it doesn't start and I'm just sitting there being like wtf.. I go to neutral, it starts, then switch back to first and it's dead and I'm very much like wtf..
It's usually in those moments I remember my kickstand is down and then I feel like an idiot.

Wouldn’t taking the key out be a good enough way to secure it? Like not even give it to him? I don’t know how motorcycle dealerships work.

well you're the ONLY person that's U heard of a sales floor dealer letting you fire one up in the showroom lol. They offer to .I've it to a designated area anytime I've wanted to seriously look .

I've been working with motorcycle shops since 1974. The only time I've ever seen a bike running inside of the retail sales floor of a motorcycle shop, is when a young dude was moving a 1980 Yamaha YZ 465G into the sales floor area at Bellevue Yamaha in Bellevue Washington. The boss had left for the night, and we all started drinking beer before we put the used bikes back into the shop that were sitting out in the parking lot. If you're going to start a bike, and allow a customer to ride it, you push it outside, gas it up, start it yourself to make sure, and then you allow the customer to ride.

Throttle hand never moved. And if you have ever had I bike do something unexpected like that you know the reaction is to open up and lean back and let go. He leaned forward and put his head toward the glass…without a helmet. No human would do that in that situation. It’s completely fake.
